Portugal’s Stuffed Piri Piri Chicken

Portugal doesn’t just hold a gold winning Olympic team, they also make chicken dishes that are gold medal worthy dishes too!

Recipe:
Butterfly Chicken Breast and fill with Caramelised onion chutney, Stilton Cheese and Chorizo.
Wrap the breast to encase the ingredients with streaky bacon.
Coat in Piri Piri Marinade.
Decorate the top with some caramelised Onion Chutney and crumbled Stilton.

Jamaica’s Jolly Jerk Kebabs

Inspired by the sprinters of Jamaica, we’re bringing you flavours of the Caribbean with jerk kebabs, perfect for those summer BBQs.

Recipe: Liberally coated chicken breast pieces in Scobies Jerk Rub (Product Code: MM72019), bursting with aromatic spices and warmth from ginger and chilli.
Add the rub at about 10% of the product weight.
Shake until completely coated.
Keep refrigerated for at least 30 minutes for the flavour to infuse.

Toulouse ‘Torchbearer’ Sausage

We’re hopping on the Eurostar to our hosts of the 2024 Olympics, delving into some traditional South of France delicacies.

Perfectly balanced sausages, flavoured with garlic and parsley, using Scobies Toulouse Sausage Mix (Product Code: SE23145):

Recipe to make 1kg batch):
Pork Trim (70/30 VL) 680g (68%)
Toulouse Sausage Mix (Product Code: SE23145) 150g (15%)
Iced water 170g (‘17%)

Mince meat through a 5mm plate.
Add sausage mix and blend
Add water and mix thoroughly
Re-mince through 5mm plate
Fill into casings

USA’s Banging BBQ Burger:

Not only is Team USA the biggest in the Olympics, so is the flavours in our USA Burger!

A mouth-watering burger patty, seasoned with Scobies Organic American burger Mix (Product Code: OG30120/5), stuffed with mozzarella cheese and generously brushed with Scobies Tennessee Marinade

Recipe:
Follow the burger recipe (for 1kg burger batch):
Organic American burger Mix 5kg (OG30120/5) 60G (6%)
Beef (80/20 VL) 920g (92%)
Iced water 20g (2%)
Mince the meat through a 5mm plate.
Add seasoning and mix
Add water and mix again
Re-mince through 5mm plate
Press into required size of burgers

Fill with Cheese optional. Coat in Tennessee Marinade (Product Code: MM14494).

Greek Truffle Shuffles

In keeping with the Olympics origins, Scobies have created a Mediterranean delight, guaranteed to catch your customers attention.

Recipe:
Using delicious minced lamb, make truffles with the Kofta burger recipe:

To make a 1Kg batch of lamb burger:
use Kofta Burger Mix 1Kg pack (Product ID: SE311340) 100g (10%)
Lamb (80/20 VL) 800g (80%)
Iced water 100g (10%)

Mince the lamb through a 5mm plate. Add seasoning and mix.
Add water and mix again.
Re-mince through 5mm plate.
Form the burger mix into Truffles and fill with a little Scobie’s Tomato Sauce (Product Code: MM13302T), peas and feta.
Coat the truffle in Greek Desire Marinade (Product Code: MM12631).
Decorate with a sprig or Fresh Rosemary and Thyme (optional).
