Newleywed's Medium Rusk is larger in size than Pinhead, and used in coarser products, for a more rustic mouth feel. It is widely used in the production of lorne sausage, bridies, pies, other compound meat products and as an ingredient for dried stuffing mixes. The grade or blend used is dependent upon the speed of absorption required, the appearance and texture required of the finished product.

40-55% retained on a 0.85mm sieve
2-12% retained on a 0.42mm sieve
Maximum of 14% passing through all the sieves.

Therefore about 80% of this medium rusk is above 0.85mm.
